Our light rye, cut open. The open, irregular crumb is what a long overnight fermentation buys you.

Who we bake for

Most of the people who buy bread here live within fifteen minutes' walk — Mile End, Outremont and the northern Plateau — and come three or four times a week rather than once.

Weekend visitors come specifically for the viennoiserie, and parents order birthday cakes with a week's notice.

Wholesale

About twenty restaurants and cafés across the island take our bread wholesale before six in the morning.
